100% manual harvest at perfect ripeness early to mid-September. Grapes are softly and slowly pressed.  12-hour maceration at low temperature in order to accelerate the natural sedimentation of the grapes skins. Controlled temperature to allow maximal expression of the aromas. No malolactic fermentation. 
4 months in stainless steel, with minimal transfer and intervention in order to preserve Solaris’ aromatic potential. 
The wine is fined (but suitable for vegans as no animal products are used) and filtered with low sulfite at bottling.
Tasting profile: apricot and passion fruit with a hint of spice at the end.
