Syrah 50%, Grenache Noir 40%, Cinsault 10%. Complete destemming. Pre fermentation cold skin maceration for 7 days. Traditional vinification in stainless steel vats only with indigenous yeast. No external additives. No added sulfites during the whole process. Maturation on the fine lees for 6 months in concrete vats.
