The grapevines are cultivated on a limestone rich hillside with excellent drainage and south exposure and benefits from a constant breeze.
The wine goes through direct pressing, 68°F temperature-controlled fermentation, malolactic fermentation, and a second alcoholic fermentation in the bottle (Méthode traditionnelle). Very low sugar dosage (6g/l).
