Novecento Novanta Nove 2018
After hand harvest, the grapes are put separately in stainless steel tanks for fermentation, which started spontaneously as no selected yeasts were added. No filtration nor clarification was made. After resting 14 months in concrete tanks (5% of Cabernet Franc in 500 L tonneaux), the wine was bottled without adding sulphites. Total sulphites at bottling: 4 mg/l.
Deep red wine with oaky undertone at sight. Bold aromas of black currant, plums and pleasant spicy notes of peppers and balsamic herbs.
