Saumur Chenin Blanc 2019
For one part (« Bonneveaux » et « Elettes ») : fermentation and aging in barrels, light heating, for 4 months, with regular « batonnages » (stirring with a stick).
For the other part(« Perruchers ») fermentation and aging in stainless steel tanks. Blending both juices in mid-January.
Few inputs, only a few grams of sulfur before bottling. Non clarified wine. Slow and light filtration on earth.
On the nose, juicy white flesh fruits and the freshness of verbena and white flowers. Then, the minerality and liveliness brightly refresh the palate with final notes of citrus and ripe apricots!
